Kyoto-produced Fish Soup Stock Wins Grand Prize
Sixth-Order Industry Food Competition"Kyo Sawara no Umami Dashi," or soup stock flavored with Kyoto-produced Japanese Spanish mackerel, won the grand prize in the sixth-order industry competition for Kyoto food focusing on newly-developed items using agricultural, forestry or fishery products from Kyoto Prefecture. The product is made by Fukushima Katsuo Co., Ltd., a producer and distributor of dried bonito fish shavings, based in Nakagyo Ward, Kyoto.
The competition was organized by the prefectural government, as it also did last year, in order to promote the sixth-order industry, which covers production, processing and marketing. There were 44 applications, out of which six items won the prizes.
The grand prize-winning product is a light-tasting, sweet and delicate flavored soup stock from boiled and dried Japanese Spanish mackerel from Maizuru. The runner-up was "Herb Heshiko Zusuhi," or herb-flavored sushi topped with salted mackerel in rice-bran paste, produced by CHIYONOYA, a traditional-style Japanese restaurant in Kyotango City, Kyoto Prefecture.
